
VEGGIE DELIGHT
This is
a restaurant replica version of the vegetarian sandwich roll available at the
Tarzana Armenian Grocery and Deli in Tarzana and Studio City.
2 large (10-inch diameter)
pita breads
4 to 6 lettuce leaves
2 ounces string cheese, pulled into strips (2 pieces)
1 small avocado, halved, seeded and cut into thin slices
10 thin slices tomato
1 tablespoon minced parsley
1/2 green OR red pepper, thinly sliced
1/2 cup thinly sliced radishes
Tahini Sauce
Split pita bread, keeping
attached at one edge. Lay open on flat surface. Across the middle of one open
side of each pita, place 1/2 of lettuce leaves. Add a layer of 1/2 of EACH of
the following ingredients: string cheese, avocado slices, tomato slices, minced
parsley, pepper slices and sliced radishes, distributing evenly.
Spoon some of Tahini Sauce
over all of layered ingredients. Put top flap of pita over ingredients and roll
up pitas, jellyroll-fashion, as tightly as possible in plastic wrap.
Refrigerate until serving.
Cut each roll in half to serve. Makes 2 to 4 servings.
TAHINI SAUCE: In a medium
bowl, combine 1/2 cup bottled tahini, 1 clove garlic, minced OR 1/2 teaspoon
garlic powder, 1/2 teaspoon ground cumin, dash cayenne pepper, 1/2 teaspoon
seasoned salt, 3 tablespoons fresh lemon juice and 6 to 7 tablespoons water,
mixing until well-blended and smooth. Use to drizzle on pita sandwiches. Keep
remaining sauce refrigerated. Makes about 1 cup.
