Picnic Potato Salad
Ingredients • 6 cups peeled, diced, cooked potatoes • 1/3 cup lemon juice • 1/3 cup chopped green onions • 1/4 cup butter, melted • 1 tablespoon chopped fresh dill, or to taste • 1 teaspoon sugar • 1 1/2 cups sliced celery • 1 1/4 cups sour cream • 3/4 cup chopped orange or red pepper
Directions: Combine potatoes, lemon juice, onions, melted butter, dill and sugar; toss well. Microwave at high (100%) for 2 minutes or until warm. Cover and let stand 1 hour to blend flavors. Just before serving, stir in celery, sour cream, and chopped pepper. Add salt and pepper to taste. Yield: 8 servings. |
